Ingredients

1kg carrots

​

2 garlic cloves

​

olive oil

​

salt and pepper

​

1 tbsp of turmeric

​

1 tbsp smoked paprika

​

2-3 tsp tahini

​

4 squeezes of lemon or 2 tbsp apple

 

cider vinegar

​

​

​

​

​

Roasted carrot dip

​

​

Method

1. Peel and chop the carrots

​

2. Add to a roasting tin and sprinkle with salt, pepper.

​

3. Add garlic cloves (unpeeled).

​

4. Roast for 30-50 minutes until soft.

​

5. Add the carrots to the blender with the paprika, turmeric, tahini, lemon. 

​

6. Take the garlic from the skins and add to the blender.

​

7. Blend until smooth.

​

8. Adjust the seasoning by adding more oil, lemon, spices or salt and pepper to suit your tastes.
